Star-Spangled Salad

Published Jul 3, 2014
We’ve got the perfect recipe to bring to any 4th of July party or picnic this weekend. It’s ready in minutes, looks beautiful and festive, is super healthy and low-cal, and – the best part – involves just four ingredients and no cooking. This Star-Spangled Salad (part of the Everyday Health editors’ easy, and inexpensive Foolproof 4th of July menu) combines sweet fruit flavors with salty cubed feta cheese and ribbons of fresh basil for added great taste. It satisfies like a main dish, but tastes like a decadent, summery dessert. In short, it’s an ideal dish that any hostess will love to add to her spread. Happy birthday, USA!

Star-Spangled Salad
Ingredients
• Watermelon (small or half of a large one)
• Blueberries (a quart)
• Strawberries (a quart)
• A block of feta cheese
Directions
Combine sweet sliced strawberries, blueberries, and salty cubed feta cheese in a serving bowl. For added flavor, we added a sprinkling of basil from our herb garden. To make the basil ribbons, stack individual basil leaves on top of one another, roll them up, and then slice into ribbons with a very sharp knife. For an extra festive look, add star-shaped watermelon cutouts on top of your salad.
